Easter Weekend

My Easter weekend turned out to be a delightful ending to a busy week.

First thing Saturday morning, Roy and I took Melise to her first Easter egg hunt! I was soooo nervous. I'm afraid I'm a bit of a stage mom because on our way there I was explaining to Melise how an egg hunt works even though she probably didn't understand most of what I was saying. It didn't help that when we got to the park, there were a lot of kids and not a lot of eggs and candy on the ground.

 I was scared that Melise was going to get trampled in the mob and not get anything at all. But when the signal was given and all the kids started running and screaming, Melise handled it all very calmly. She only had to be shown the procedure for placing things in the basket once and then she was a candy-collecting machine!



She didn't get any plastic eggs, but she got several pieces of candy.This all transpired in less than one minute and then the egg hunt ended as suddenly as it began! Many of the families made their way over to the playground for a little more fun before heading home.

 
The big kids were on the little merry-go-round, so Melise took over the big one!

The next day was Easter, of course. We had Roy's parents and Grandma over for dinner (dinner at lunchtime, that is). Big Roy and Kathy brought the ham and we supplied potatoes and asparagus. I had announced several days ago that I would make twice-baked potatoes. Roy thought I had gone crazy because I usually avoid cooking things that take a lot of effort, like carving out the insides of potatoes and then restuffing them. But here's my recipe for excellent, easy twice-baked potatoes:

  1. Peel and bake a bunch of potatoes. Disregard peels entirely.
  2. Place them in a mixer bowl, add sour cream and milk, and mix a while.
  3. Whine to your husband (who happens to be an excellent cook) that the potatoes aren't coming out right.
  4. Let your husband take over so that the potatoes will come out smooth and tasty.
  5. Scrape potatoes into a casserole dish, top with cheese, and reheat in oven. 
Okay, so I cheat a little on the recipe. I plan to be a master in the kitchen someday - a master of shortcuts, that is!

Anyhow, dinner was delicious, but the best part came after. Big Roy made us a shoofly pie! Remember my cake recipe? That's good, but it's just not the same as a proper wet-bottom shoofly pie. Mmmmm, it was so tasty. Gooey on the bottom and crumbly on top! Wonderful! Just thought I'd make your mouth water a little . . .



After dinner, Kathy went out and spread easter eggs around the yard so Melise could have a proper egg hunt. It was so much fun to watch her get excited about picking up empty plastic eggs! Wouldn't it be nice to be that easily pleased again?


Egg hunt, take two.

The wind came up, so as soon as Melise grabbed the last egg we ran back in the house. Melise got very upset about this because she wanted the egg hunt to keep going . . . . So we hid eggs around the living room and she was briefly contented. The egg hunt has been repeated several times since then throughout our house! You just have to be careful that she doesn't see you taking the eggs out of the basket to be hidden again because it upsets her . . . Oh the joy!

We finished off the day with a supper of leftovers: ham, potatoes, asparagus and shoofly pie! And that was the last of the pie!
